Teriyaki Pineapple Salmon Burger

It’s grillin’ season and I love nothing more than getting out the cold beers and good music while everyone hangs out around the grill.

Ingredients:

  • 1 large salmon fillet
  • 4 slices of pineapple
  • Romaine lettuce
  • Tomato, slice
  • Teriyaki sauce, recipe follows
  • Spicy sauce, recipe follows
  • Sesame Hamburger buns

Teriyaki Sauce:

  • 1/2 C. soy sauce
  • 1/4 C. brown sugar
  • 1-1/2 tsp. fresh ginger, finely minced
  • 1 tsp. garlic, minced
  • 1 Tbsp. honey
  • 1 tsp. sesame oil
  • 3 Tbsp. Mirin (or sherry)
  • 1/4 C. water mixed with 3 tsp. cornstarch

Spicy sauce:

  • olive oil
  • 1/2 onion, chopped
  • 4 cloves garlic, minced
  • 1 tomato, chopped
  • 1/2 C. chicken stock
  • 2 Tbsp. adobo sauce
  • 1/4 C. cream cheese
  • 1/2 C. shredded Parmesan
  • 1/4 C. heavy cream
  • 1 tsp red pepper flakes
  • Miracle Whip or mayo

Make your teriyaki sauce by combining all ingredients in a saucepan and simmer for a couple minutes and remove from heat, let cool.

Make the spicy sauce. In a saucepan, over medium heat, add the olive oil and onion. Cook for about 5 minutes until soft. Add the garlic and tomato. Cook for about another 5 minutes then add the chicken broth and adobo sauce. Add in the cream cheese and Parmesan until combined. Stir in the cream and red pepper flakes. Simmer, stirring, until nice and creamy, about 10 minutes. Add everything to a food processor and puree until smooth.

Preheat grill and lightly oil the grate. Place salmon, skin side down, on a sheet of tin foil. Brush teriyaki sauce on salmon and pineapple slices. Grill salmon until done, about 8 minutes depending on thickness. Grill pineapple until grill marks appear, a minute or two per side. Toast buns if desired.

Assemble your burger. Spread mayo on bottom bun, top with lettuce and a tomato slice, add a good chunk of the salmon and brush with additional teriyaki sauce. Add pineapple and drizzle spicy sauce on top.

I served this with a spicy asian coleslaw and grilled sweet potato fries, fantastic summer meal!
