Sun Dried Tomato and Pesto Stuffed Mushrooms










  • 15-20 large mushrooms
  • 1/3 C. sun dried tomatoes, chopped
  • 3 cloves garlic, minced
  • 1 large shallot, minced
  • 4 Tbsp. basil pesto
  • 6oz. cream cheese, softened
  • 6 strips bacon, cooked and crumbled (grease reserved)
  • 1/2 C. spinach
  • 4 oz. olives, chopped
  • Olive oil
  • salt and pepper to taste
  • 1/2 C. feta cheese

Preheat oven to 350°

Add 1 Tbsp olive oil to 1 tsp. reserved bacon grease. Sautee garlic and shallots until soft, season with salt and pepper.

In a large bowl combine everything except for feta cheese.

Stuff mushrooms and bake for 10 minutes. Top with cheese and serve.
