- 1 avocado
- 1 C. smoked salmon
- 1/4 C. cream cheese
- 3 Tbsp. mayonnaise
- 3 green onions, chopped
- 18 large mushrooms
- 2 tsp. lemon juice
- panko bread crumbs
- 2 tsp. olive oil
- salt and pepper to taste
- 1-2 tsp. grated fresh ginger
- 1/4 C. cucumber, seeded, peeled, and sliced
Preheat oven to 425°
Rinse mushrooms and remove stems.
To a food processor add all ingredients except panko and olive oil.
Place mushrooms in a foil lined baking dish. Bake for 10 minutes.
Remove from oven, let cool, discard liquid in the caps.
Stuff with salmon mix and bake another 10 minutes.
Combine panko and olive oil in a bowl. Remove mushrooms, top with panko mix and broil until browned, about 45 seconds to a minute.
