Roasted Chickpea and Green Bean Salad


  • 1 Can chickpeas
  • 1/2 Lb. fresh green beans, trimmed and cut in half
  • 3 cloves garlic, minced
  • 1/2 C. frozen corn, thawed
  • 1/2 red onion, chopped
  • 1 red bell pepper, chopped
  • 2 Tbsp. olive oil
  • Salt and pepper, to taste

Preheat oven to 350°

In a large bowl, combine chickpeas, green beans, garlic, red pepper and olive oil until coated.

Spread out on a foil lined baking sheet and roast for 20 minutes, stirring half way through cooking time.

Remove from oven, add corn and onion, mix/stir, and roast another 10 minutes.


Season with salt and pepper and serve either hot or cold.
