I had a bunch of left over pork roast so whipped this up.
- Leftover roast pork, thinly sliced
- 3 sweet onions, thinly sliced
- 3 cloves garlic, minced
- 1/2-1tsp red pepper flakes
- 4 oz mushrooms, sliced
- 3 Tbsp. butter
- Salt and pepper to taste
- Au jus gravy mix
- provolone cheese
- French rolls/Hoagies
Caramelize your onions. Melt 2 Tbsp. butter to skillet and add onions, topping with a little salt. Continue to layer in this manner until all onions are in. Let cook about 20 minutes, stir, and reduce heat to low. Let cook, stirring occasionally until a nice dark brown color. Add garlic and cook another 10 minutes or so. Add mushrooms and cook until liquid has released and they are also a nice golden brown. Add red pepper flakes.
Butter your rolls and broil until crisp. Top with pork slices, mushroom/onion mix, and then provolone cheese. Put under broiler until cheese is melted.
Make Au jus according to package directions.
