I had enough to make 2 of these and freeze one for later. Served with soup its a complete meal. Or serve as an appetizer at your next gathering. You can use store bought pizza dough, or make your own, I have included the recipe.
- 1 sweet onion, thinly sliced
- 1 red bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- 1/2lb thinly sliced ham
- 1/2 Portuguese brand sausage (hot), thinly sliced
- 2-3 cloves garlic, minced
- 1-2 chipotle peppers, minced (with seeds)
- 1 C. shredded mozzarella cheese
- 3 1/2 C. flour
- 1 tsp. sugar
- 2 tsp. salt
- 1 pkg active dry yeast
- 1 1/2 C. warm water
- 2 Tbsp. olive oil
If making the dough, start with that. Add all dry ingredients to a large bowl and combine. Make a well in the center and add your wet ingredients, mixing completely. If it’s too wet, just add more flour, but you dont want a super dry dough. Coat another bowl with a little olive oil and place your dough in it, coating it with the olive oil from the bowl. Cover, put in a warm place until it doubles, punch it down and let it rest another hour until it doubles again. Split into two balls and set aside (covered).
While your dough is rising you can prepare the filling. In a large saucepan heat 2 Tbsp. olive oil over medium high heat and add all the veggies except the chipotle peppers and garlic. Sautee until soft. Add chipotle peppers and garlic, cook until fragrant, couple of minutes. Set aside until cool enough to handle.
Roll out your dough on a lightly floured surface. Put a layer of veggies on the dough, top with a layer of ham, and then a layer of sausage. Top everything with cheese and roll into a log, or as close to a log that you can. seal up the sides and either store in freezer or bake at 375° until golden brown, about 20 minutes.
