Pork Stuffed Tomatoes











  • 1 lb. ground pork
  • 3 cloves garlic, minced
  • salt and pepper
  • 1/2 tsp. dried oregano
  • 1 tsp fresh rosemary, chopped
  • 2 tsp. fresh parsley, chopped
  • 1 tsp. fresh thyme
  • 1/4 tsp red pepper flakes
  • 1 yellow bell pepper, chopped
  • 1 egg, beaten
  • 1 C. bread crumbs
  • feta cheese

Preheat oven to 350°

Cut tomatoes in half and scoop out the insides with a spoon. Discard insides and set tomatoes in a foil lined baking dish.

Heat 1 Tbsp. olive oil in a pan over medium high heat. Add to pan the pork, onion, garlic, rosemary, thyme, pepper flakes, oregano, salt, and pepper and cook until pork is cooked through. Make sure to break up any large chunks of pork with a fork or spatula.

Add bell peppers and cook another 2 minutes, remove from heat.

Add bread crumbs and egg, mixing thoroughly.

Stuff tomatoes with filling and bake for 40 minutes. Remove from oven and let cool for about 5 minutes.

Top with feta cheese and additional parsley if desired.
