Lemon Chicken Wraps with Spicy Sauce

This is fantastic for those hot summer nights that you don’t want to slave over a stove. Grab some beer, grab some friends, and start grilling!

  • 4 chicken breasts (or thighs) cut into 1″ cubes
  • Extra virgin olive oil
  • 4 cloves garlic, minced
  • 1 Tbsp. lemon zest
  • 1  Tbsp, lemon juice
  • 2 tsp. salt
  • 1 tsp. pepper
  • 1 tsp. oregano
  • 1 tsp. cumin seeds (ground is fine too)
  • 1/2 tsp. ground coriander
  • 1/2 tsp. paprika

Spicy Sauce:

  • 1/2 C. mayonnaise
  • 1/4 C. sour cream
  • 3 Tbsp. Sriracha sauce
  • 1 tsp. smoked paprika
  • 1 tsp. cayenne
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1/2 tsp. red pepper flakes
  • 1 Tbsp. lemon juice
  • 5 cloves garlic

  • Tortillas or flat bread
  • Spinach
  • Tomato, chopped
  • 1/2 cucumber, chopped
  • 1/2 red onion, cut into 1/4″ pieces
  • feta cheese

Start by putting your chicken  and all the seasonings into a large bowl and toss well to coat. Cover and place in refrigerator to marinate for at least 30 minutes.

Make the sauce by putting all the ingredients into a food processor alcwss2nd pulsing until smooth, refrigerate.

Once chicken is done marinating, skewer all of them. Place red onions in a small bowl, drizzle with olive oil and lightly season with salt and pepper, toss to coat then skewer separately. Preheat grill over medium heat and lightly oil grates.

Grill chicken and onions until done, flipping occasionally for even cooking, about 15 minutes.

Assemble your wrap first with spinach, tomato, cucumber, chicken, and then the grilled onions. Drizzle with spicy sauce and top with feta.

Side note: If you choose to use tortillas (which tasted fine though the next time I would want to use flat bread I just didn’t have any), I like to heat butter in a skillet and lightly fry both sides.
