Honey Pistachio Rice

Sweet and nutty, a simple but delicious side dish.








  • 1 C. Jasmine rice
  • 2 C. vegetable stock
  • 1/4 C. honey
  • 1 onion, chopped
  • 3 carrots, chopped
  • 1 Tbsp. butter
  • 1 C. pistachios, chopped
  • 2 tsp. curry powder
  • 1/4 tsp. cayenne powder
  • 1 tsp. ground coriander


Heat butter in a large skillet over medium high heat. Add onions and carrots and cook until onions are translucent. Increase heat to high and remaining ingredients except pistachios. Bring to a boil and reduce to low, cover, and cook until rice is soft, about 15-20 minutes. Remove from heat, mix in pistachios and serve.
