For the potatoes:
- 1 Large Sweet Potato
- 1 Tbsp. Smoked Paprika
- 4 Cloves garlic, minced
- 2 tsp. Cumin
- Olive oil
For the Aioli:
- 1 C. Mayonnaise
- 3-4 Tbsp. Honey
- 2-3 Tbsp. adobo sauce (can get from a can of chipotle chilies in adobo sauce)
Make the aioli by combining all ingredients, set aside.
Cut your sweet potato into wedges. In a bowl, combine wedges, about 2 to 3 Tbsp. olive oil, paprika, garlic, and cumin and toss to coat.
Lightly oil grill with cooking spray and preheat over medium heat. place the sweet potatoes on grill and let cook about 20 – 30 minutes, flipping in the middle. Wedges are done when they are soft and have nice grill marks on them.
Serve with your favorite dipping sauce, or my honey adobo aioli.
