Chipotle Peach Pulled Pork Sandwiches


  • 3 lb. Pork roast
  • 1 Tbsp. Olive oil
  • 1 onion diced
  • 5 ‘ll as garlic, minced
  • 2 C. Ketchup
  • 4 Chipotle chilies, minced
  • 1 1/2 Tbsp. Adobo sauce
  • 1/4 C. Apple cider vinegar
  • 2 15oz. Can peaches in light syrup
  • 2 Tbsp. Wortchestire
  • 2 Tbsp. Lemon juice
  • 1 Tbsp. Dijon mustard
  • 1/3 C. Brown sugar
  • 1 tsp. Liquid smoke
  • 1/3 C. Water
  • Salt and pepper to taste
  • Hamburger buns

To a crockpot add 1 cup chicken broth and the pork roast. Cook on low for 5-6 hours. Shred with forks.

An hour before the roast is done start your sauce.

In a saucepan over medium high heat add Olive oil and onions. Cook until soft, about 10 minutes. Add garlic and cook 30 seconds. Add all other ingredients except water, salt, and pepper, and stir to combine. Bring to a boil and then Add water, salt, and pepper. Reduce to a simmer and cook about an hour stirring occassionally.

Add sauce to pork, stirring. Toast your buns, heap on the pork and enjoy.
