Cheesy Pea Bake

Here is a nice side to serve with hamburgers, hot dogs, or any sort of light main meal.


  • 4 cloves garlic, minced
  • 1 onion, chopped
  • 1/2 can cream of mushroom soup
  • 1 C. salami, chopped
  • 1/2 C. mozzarella, shredded
  • 1/4 C. Parmesan, shredded
  • 1/2 tsp. dried basil
  • 1 16 oz. bag frozen peas
  • salt and pepper to taste
  • 1/2 C. heavy whipping cream
  • olive oil
  • 1/2 C. panko bread crumbs

Preheat oven to 350°

Heat about 2 Tbsp. olive oil over medium high heat. Add onions and cook until soft, about 10 minutes. Add garlic, basil, salt and pepper to taste, and salami. Heat for about a minute and then add soup and cream, heat through, about another 10 minutes, stirring.

In a large bowl combine the soup mix, peas and cheese. In a foil lined baking dish sprayed with cooking spray, spread out the mixture.

Bake for 10 minutes. While that is baking, combine panko with about a Tablespoon olive oil and top pea mixture with it. Turn oven to broil. Broil until cheese is melted and panko is browned, about 2-3 minutes. Remove and serve.
