Cheesy Cabbage Bake
This is a great side for a light main. I’m not going to lie, I would definitely consider this ‘comfort food’. We can all splurge once in a while though, right?
- 4 C. chopped cabbage
- 3 Tbsp. Bacon Bourbon Jam, (optional)
- 6 strips bacon, cooked and chopped, grease reserved
- 2 cloves garlic, minced
- 1/2 onion, minced
- 1/2 C. shredded mozzarella cheese
- 1/2 C. sour cream
- 1.5 tsp paprika
- salt and pepper to taste
Preheat oven to 350°
Mix the sour cream and cheese in a bowl, set aside.
Add onion to hot bacon grease and cook until softened. Add garlic and cook until fragrant. Add cabbage and cook about 7 minutes. Add jam and bacon, cook an additional 7 minutes. Season with paprika, salt, and pepper.
Line a baking dish with foil and spray with cooking spray (for easier clean up).
Pour cabbage mixture into dish. Top with sour cream and cheese mix. Bake 10 minutes and chop with parsley if desired.
