Black Beans and Bacon
Perfect for a summer grilling side dish.
- 1 can black beans, rinsed and drained
- 2 roma tomatoes, chopped
- 2 cloves garlic, chopped
- 1 carrot, peeled and chopped
- 1/2 C. chopped red onion
- 6 strips bacon, cooked and crumbled, greased reserved
- salt and pepper to taste
Start by adding the onions, garlic, and carrot to the reserved bacon grease. Cook until just softened, about 5 minutes.
Add the beans, tomatoes, and the bacon to the pan and stir to combine. Season with salt and pepper. Simple and yummy!
