- 1 lb. chicken breast
- 1 pkg. dinner rolls
- 1/2 red onion, diced
- 6-8 bacon strips, cooked and diced
- 1/2 C. butter
- 4 cloves garlic, minced
- 1 tsp. plus more dried oregano
- salt and pepper to taste
- garlic powder to taste
- 1 to 1 1/2 C. pizza sauce
- 1 to 1 1/2 C. bbq sauce
- 2 C. shredded mozzarella cheese
- 2 tsp. fresh basil, chopped
- 1 tsp. red pepper flakes
- olive oil
- Parmesan cheese to taste
- pineapple chunks (optional)
Preheat oven to 375Â°. Line a baking dish with foil and spray with cooking spray. Cut rolls in half horizontally and remove the tops. Spread pizza sauce over the bottoms and place in dish, set aside.
Heat about 2 Tbsp. olive oil over medium high heat. If chicken breasts are really thick, slice horizontally to thin. Season both sides with salt, pepper, garlic powder, and oregano to taste. Cook in hot oil until done and no longer pink in the middle, set aside until cool enough to handle and then dice.
Layer on the bottom half of the rolls chicken, red onion, bacon, cheese, and then finally bbq sauce (If using pineapple you will want to add it before the bbq sauce). I just drizzled it on, but you could spread it on the top halves of the rolls too. Place tops of rolls on the bottoms.
Melt butter in microwave. Stir in basil, chopped garlic, 1 tsp. oregano, and red pepper flakes. Brush tops of rolls generously with butter.
Bake in oven until cheese is melted and tops are nicely browned and crisp.
