Had some Roasted Garlic Chipotle Butter on hand and whipped these delicious babies up. Serve them as an appetizer or I just had them as a side for steaks.
- 8 large scallops
- 8 strips bacon
- 2-3 Tbsp. Roasted Garlic Chipotle Butter
Cook bacon halfway. If you try to cook the bacon all the way while on the scallops than your scallops will be over done.
Season scallops with salt and pepper. Wrap 1 piece of bacon around 1 scallop and secure with a toothpick.
Heat an outdoor grill to medium high heat and lightly oil grates.
Cook scallops about 4 minutes per side. Remove from grill and while still hot add a small amount of butter to the tops.
