I’ve made this a number of times, and they disappear in literally minutes. The picture does not do it justice! Also, here is the recipe for the Roasted Garlic Chipotle Butter.
- 1/2 lb. raw shrimp, peeled and deveined
- 3-4 Tbsp. Chipotle Butter
- 1 Tbsp. olive oil
- 1 Tbsp. Worcestershire
- 1 tsp. liquid smoke
- 1 tsp smoked paprika
- 1 tsp. dried oregano
- 1/2 to 1 chipotle pepper,¬†minced
- juice from half a lemon
- 4 cloves garlic, minced
- 2 Tbsp. parsley, chopped
- salt and pepper to taste
- enough bacon to wrap all the shrimp (cut into thirds or halves)
- brown sugar
Add all ingredients except shrimp to a saucepan over medium heat. Cook, stirring, about 10 minutes. Remove from heat, let cool.
Stir in shrimp let marinate in sauce for at least 20 minutes.
Wrap each shrimp in bacon and secure with a skewer or toothpick. sprinkle with brown sugar and let sit another 10 minutes.
Grill shrimp until done, about 7 minutes, turning.
Garnish with more parsley if desired.
